Medium-sized capers with 20% of sea salt. Harvested by hand, every 8/10 days from May to September, the farmer returns to the same plant to pick the flower buds that have not yet blossomed. Dark green color tending to mustard. Violet reflections. Capers are extremely versatile. They can be used for salads, as a condiment for pasta or as an ingredient in tomato-based sauces, as well as to garnish fish and meat dishes. Always desalinate before use.
